
Pulled Pork
Ingredients
- 1 3lb boneless pork roast, cut into 3-4in cubes
- 2 Tbsp Olive Oil
- 1/3 cup apple cider vinegar
- 2 cups barbecue sauce
- 1 1/4 cup chicken or beef broth
- 1 tsp hot pepper sauce
Spice Rub
- 2 Tbsp packed brown sugar
- 4 tsp smoked paprika
- 4 tsp garlic powder
- 4 tsp onion powder
- 2 tsp salt
- 2 tsp pepper
- 1 tsp cumin
Directions
- In a small bowl, mix seasonings for spice rub together. Season cubed pork.
- Turn instant pot to saute setting. Add olive oil and heat.
- Working in batches, saute cubed pork in hot oil, browning on all sides.
- Turn off instant pot, use 1/4 cup of broth to deglaze the bottom off the pot, scraping any browned bits.
- Whisk together apple cider vinegar, hot sauce, and 1 cup barbeque sauce.
- Add all meat and barbeque sauce mixture to instant pot. Cook on manual high pressure for 40 minutes.
- Allow manual pressure release for 40 minutes. Shred, add additional barbecue sauce as desired. Serve.
